Alphonso Mango & Coconut Barfi

Ingredients:

  • 2 cups grated coconut (made from one large coconut)
  • 25g Mango Powder 
  • 1 cup sugar 
  • 1/2 tsp ghee
  • 2 tbsp granulated sugar for setting

Directions:

  1. Mix sugar with grated coconut and let it rest for 5 minutes. 
  2. Grease a tray and plastic bag / glove with ghee and keep it aside for later.
  3. Add 1/2 tsp ghee to a kadhai / pan. 
  4. Pour in coconut and sugar mixture; keep it on a low-medium flame. 
  5. Stir continuously until sugar melts.
  6. Add mango powder and cook stirring until aromatic.
  7. It will take around 15 minutes for the mixture to become dry and form into a ball. Once ready, it will turn dense, sticky, dry, heavy and leave behind a wonderful mango smell. 
  8. Transfer mixture to greased tray immediately. Press down evenly with a glove or a plastic bag to achieve desired thickness. 
  9. Cut into pieces with a sharp knife.
  10. Serve once cooled.
