Alphonso Mango Sheet Cake (with eggs)

Ingredients:

  • 1 and 1/2 cups (200 gm) maida
  • 1/2 cup (125 ml) melted butter
  • 1/2 tsp baking soda
  • 1 + 1/4 tsp baking powder
  • 2 eggs
  • 3/4 cup (165 gm) granulated sugar
  • 1 and 1/2 tsp vanilla essence
  • 100gm Mango powder

Directions:

  1. Sieve maida, baking powder and soda together; keep aside.
  2. Whisk eggs lightly.
  3. Add sugar until it dissolves in the beaten eggs. 
  4. Mix in melted butter and vanilla essence.
  5. Add mango powder in parts to make mixing easier and smoother.
  6. Mix in dry ingredients in 3 parts. Add 2-3 tsp milk with every part while mixing to help combine well.
  7. Beat well till creamy and thick.
  8. Grease tray and cover with baking sheet.
  9. Pour the batter on tray and spread evenly. 
  10. Wet your palms and dab it gently across the surface of the cake batter.
  11. Bake in preheated oven - for 12 minutes at 175 degrees.
  12. Cool down and cut.
