Alphonso Mango Wheat & Oatmeal Cookies

A healthy baked dessert, snack, breakfast - you can have it all!

Ingredients

  • 1 and 1/2 cups Whole Wheat Flour
  • 1 cup Purios Ratnagiri Alphonso Mango Powder
  • 1 1⁄4 cup rolled oats
  • 1/2 cup chopped almonds
  • 3⁄4 tsp baking powder
  • 1⁄2 tsp baking soda
  • 1⁄2 tsp cinnamon + nutmeg
  • 6 oz butter (softened)
  • 3⁄4 cup brown sugar
  • Zest of 1⁄2 lime
  • 2 eggs
  • 1 tsp vanilla essence

Directions

  1. Stir together roughly chopped almonds, rolled oats and Mango Powder.
  2. In a small mixing bowl, stir together flour, baking powder, baking soda, cinnamon and nutmeg until evenly distributed. Set aside.
  3. In a large mixing bowl, add softened butter, brown sugar and lime zest, and beat until light and fluffy. Add eggs and vanilla - beat again.
  4. Slowly add the flour mixture, mix until just combined. Add the oat and mango mixture and stir until evenly distributed.
  5. Make your cookie dough balls; set to refrigerate and ready to bake.
  6. Preheat oven to 350°F. Bake for 10-15 minutes, rotate the baking sheet at the median mark. Please note: The baking time may vary according to your oven.
  7. Remove from the oven and allow cookies to cool on a wire rack.
