A healthy baked dessert, snack, breakfast - you can have it all!
Ingredients
- 1 and 1/2 cups Whole Wheat Flour
- 1 cup Purios Ratnagiri Alphonso Mango Powder
- 1 1⁄4 cup rolled oats
- 1/2 cup chopped almonds
- 3⁄4 tsp baking powder
- 1⁄2 tsp baking soda
- 1⁄2 tsp cinnamon + nutmeg
- 6 oz butter (softened)
- 3⁄4 cup brown sugar
- Zest of 1⁄2 lime
- 2 eggs
- 1 tsp vanilla essence
Directions
- Stir together roughly chopped almonds, rolled oats and Mango Powder.
- In a small mixing bowl, stir together flour, baking powder, baking soda, cinnamon and nutmeg until evenly distributed. Set aside.
- In a large mixing bowl, add softened butter, brown sugar and lime zest, and beat until light and fluffy. Add eggs and vanilla - beat again.
- Slowly add the flour mixture, mix until just combined. Add the oat and mango mixture and stir until evenly distributed.
- Make your cookie dough balls; set to refrigerate and ready to bake.
- Preheat oven to 350°F. Bake for 10-15 minutes, rotate the baking sheet at the median mark. Please note: The baking time may vary according to your oven.
- Remove from the oven and allow cookies to cool on a wire rack.
